How did I end up sharing recipes? I’m not a cook. Oh yea, I remember. I’m an aspiring “chef”.
That just means I’m trying to do a better job overall of cooking and planning meals. I’m trying to cook healthier as well.
So a couple of weeks ago, I made this meal. The potato salad was a brilliant idea. You’ll see why in a minute. I tried to get really creative.
Anyway, I love egg salad I’ve come up with what a I think is a great recipe.
First of all, it’s a good idea to boil your eggs. 🙂 I usually boil mine for only about five minutes, then I cover them, turn off the heat and let them sit for about ten minutes. Then I pour out the hot water and add cold water to the pan. I repeat that a few times till the pan cools down.
When I get ready to make the egg salad, I mash it with a fork so it’s more like a spread. I like it better this way. I use half mayo and half Miracle Whip and keep the mixture on the dry side. Depending on how much I’m making, I add cumin and curry powder. For six eggs, it’s about 1/2 tsp of each. I rarely add salt but I do add some black pepper.
I like Romaine lettuce because of the crunch. This time I add avocado slices. It was s-o-o-o–o good.
Yes, this is white bread. My friend buys it all the time and if I know I fixing sandwiches, I buy it, too. It’s very soft but not too soft. It’s Italian bread from Walmart. I like the size of the slices. It’s not the bread I buy on a regular basis, so don’t tell me how bad it is.
But it’s the potato salad I want to tell you about.

We had these the night before and I had just enough leftovers so I thought, “Why not potato salad”?
So I cut them up and added some mayo and a couple of hard-boiled eggs. It was the best potato salad ever.
RECIPE: Egg Salad
Six hard boiled eggs
Equal amounts of mayo and Miracle Whip
1/2 tsp curry powder
1/2 tsp cumin
Chop eggs, add the rest. Voila! That’s it.
RECIPE: Leftover Parmesan Butter Potato Salad
Cut up potatoes.
Add rest of ingredients and toss.
