Twenty-three dozen Anzac cookies and still baking!

I posted the other day about our Anzac cookies.

Here’s the backstory.

ANZAC stands for “Australian, New Zeeland Air Corp”. These cookies were created to be a high calorie, long-lasting cookie for the enlisted men. They shipped easily and because there are no eggs, they were able to keep them for a long time.

There are a number of versions but we finally settled on one. We have them pretty well perfected by now. By that I mean, we know how much Golden Syrup to use to get the texture we want. We’ve experimented with the baking times. I like them extra crispy.

These are the cookies in their unbaked state:

They don’t look too different after they’re baked, just darker.

I have also crumbled the dough mixture on a baking sheet and baked it to use as a topping for various desserts. You could also add raisins, nuts, etc and make a granola out of the crumbs. Remember, though it won’t be low-calorie.

So, we have twenty-three dozen baked and another five dozen shaped into balls and frozen. We haven’t tried this before so I don’t know if that will work or not.

I will soon be posting the recipe. But remember, we “tweeked” this recipe a little, and also played around with the bake times.

They aren’t a pretty cookie but you could dip one side in melted dark or white chocolate to “fancy” them up a little.
